Ingredients

For the zucchini layers:

  • 3-4 medium zucchinis, thinly sliced lengthwise (about 1/8 inch thick)
  • 1 teaspoon salt

For the meat sauce:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

For the cheese filling:

  • 1 cup ricotta cheese
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (or 1 teaspoon dried basil)
  • 1/2 teaspoon garlic powder

Instructions


Prepare the zucchini slices:

  • Slice the zucchinis lengthwise into thin strips using a mandoline or a sharp knife.
  • Lay the slices out on paper towels or a clean kitchen towel. Sprinkle lightly with salt to draw out moisture. Let them sit for about 15 minutes, then pat dry with more paper towels.

Cook the meat sauce:

  • Heat olive oil in a large skillet over medium heat. Add the onion and garlic, cooking until softened (about 3 minutes).
  • Add the ground meat, breaking it up with a spoon, and cook until browned.
  • Stir in the marinara sauce, Italian seasoning, and red pepper flakes (if using). Simmer on low for 10 minutes. Season with salt and pepper to taste.

Prepare the cheese mixture:

  • In a mixing bowl, combine ricotta cheese, egg, Parmesan cheese, basil, and garlic powder. Mix until smooth.

Assemble the lasagna:

  • Spread a thin layer of meat sauce on the bottom of a 9x13-inch casserole dish.
