Roasted turkey breast with garlic and herbs is a classic dish that brings together the succulent flavor of turkey with the aromatic essence of fresh herbs and garlic. This preparation is ideal for both festive occasions and everyday meals, offering a delightful alternative to a whole turkey, especially for smaller gatherings.

Ingredients

  • 6 lb bone in turkey breast I use a half breast
  • 5 tablespoons butter softened
  • 1 teaspoon minced garlic
  • 1 tablespoon sage leaves finely minced
  •  1 1/2 teaspoons rosemary leaves finely minced
  • 1 tablespoon thyme leaves finely minced
  • 2 tablespoons parsley finely minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Rosemary sprigs for garnish optional
  • Cooking spray

Instructions

Preheat and Prepare: Set the oven to 450°F (232°C). Lightly coat a baking dish with cooking spray.


Mix Herb Butter: In a bowl, combine softened butter, minced garlic, sage, rosemary, thyme, parsley, salt, and pepper until well blended.


Apply Butter Mixture: Gently loosen the turkey breast skin without detaching it. Spread half of the herb butter beneath the skin and the remaining half over the top.


Initial Roasting: Place the turkey breast in the prepared baking dish. Roast in the preheated oven for 15–20 minutes, or until the skin begins to brown.


Continue Roasting: Lower the oven temperature to 350°F (177°C). Continue roasting for about 1 hour and 15 minutes, occasionally basting with pan juices.


Check Temperature: Insert a meat thermometer into the thickest part of the breast. Once it reads at least 160°F (71°C), remove the turkey from the oven.



Rest and Serve: Cover the turkey with foil and let it rest for 5–10 minutes, allowing the internal temperature to reach 165°F (74°C). Garnish with rosemary sprigs if desired, carve, and serve.
