These roasted carrots combine the natural sweetness of maple syrup with the rich depth of balsamic vinegar for a perfectly balanced flavor. With a touch of Dijon and fresh parsley, this easy side dish brings a vibrant and delicious twist to your table.

Ingredients

  • 2 lbs carrots
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 freshly ground black pepper
  • 2 tablespoons Italian parsley; chopped


Instructions


Preheat the oven to 400°F.


Prepare the Carrots: If not peeling the carrots, wash and trim them thoroughly. To keep the greens intact, use a paring knife to clean around where the greens meet the carrot. Optionally, peel the carrots from the trimmed part to the tip. For larger carrots, slice them in half lengthwise or into quarters. Place the prepared carrots in a glass baking dish or bowl.


Combine Ingredients: In a small jar, combine the vinaigrette ingredients: olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper. Secure the lid and shake well until fully mixed.

Pour the vinaigrette over the carrots and massage to ensure they are evenly coated.


Bake: Spread the carrots on a baking sheet and bake for 30-40 minutes, depending on your preference—less time for lightly roasted carrots, or longer for more caramelization. Flip them halfway through, if desired.


Serve with your favorite toppings: Remove the carrots from the oven, arrange them on a serving plate, and sprinkle with sea salt or finishing salt and freshly chopped parsley.
