Ingredients

  • 2 Tbsp. extra-virgin olive oil
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 1/2 tsp. paprika
  • 1 1/4 tsp salt
  • 1 tsp. chili powder
  • 1 tsp. dried oregano
  • 1/2 tsp. black pepper
  • 2 cups long-grain white rice 
  • 1 (14.5-oz.) can fire-roasted diced tomatoes 
  • 2 (15.5-oz.) cans kidney beans, drained and rinsed
  • 3 cups vegetable or chicken broth (sub water)
  • 1/3 cup sliced green olives

Instructions


Preheat the Oven and Saute: Preheat the oven to 395°F. In a large ovenproof frying pan, heat the olive oil over medium heat. Sauté the onion, chorizo, and peppers with a pinch of salt and pepper for about 15 minutes, until the vegetables are softened and the chorizo releases its oils. Stir in the paprika and garlic, cooking for a few more minutes until fragrant.


Combine and Stir: Add the chopped tomatoes, olives, and butter beans to the pan, stirring to combine. Season the mixture to taste. Arrange the chicken thighs on top, seasoning them well. Transfer the pan to the oven and bake for 40 minutes, or until the chicken skin is crispy and the meat is tender.


Garnish with parsley, serve and enjoy!
