  • 1 lb Chicken Breast
  • 2-3 Tbsp Lime Juice
  • 1 Tsp Honey or brown sugar or agave
  • 1 Tsp Ground Cumin
  • 1 Tsp Ground Coriander
  • ½ Tsp Cayenne Pepper
  • 3 Tbsp Olive Oil, divided
  • Sea salt and pepper, to taste
  • 2 Cups Cooked Quinoa, or rice if preferred
  • 2 Cups Sweet Corn
  • 2 Cups Cherry Tomatoes Halves
  • 1 Avocado, slice
  • 1 Small Red Onion, sliced
  • Fresh Cilantro to garnish
  • 1 Lime, juiced
  • Lime Wedges to serve

Instructions


Prepare the Marinade and Coat the Chicken: In a mixing bowl, combine 1 tablespoon of olive oil, honey, lime juice, cumin, coriander, cayenne pepper, and a pinch of salt. Add the chicken breast and mix thoroughly to ensure it is evenly coated on all sides.


Grill the Chicken: Heat a grill pan or outdoor grill over medium-high heat. Cook the chicken until it is fully cooked and no longer pink in the center, approximately 10–12 minutes. Remove the chicken from the grill, place it on a chopping board, and let it rest for 5 minutes before slicing.


Prepare the Quinoa Mixture: In a large bowl, combine quinoa, sweet corn, tomatoes, onions, and freshly chopped cilantro. Drizzle with 1 tablespoon of olive oil and lime juice, then season with salt and pepper to taste. Mix well to combine.


Assemble the Bowls: Divide the quinoa mixture evenly among four bowls. Top each with the sliced grilled chicken and avocado. Enjoy!
