Ingredients

  • 1 lb campanelle pasta, or pasta of choice, whole wheat if available
  • 1/4 + 2 tbsp olive oil, divided
  • 1/2 pound boneless (skinless salmon filet, cut into 1 1/2 inch cubes)
  • 1 red onion (halved and sliced)
  • 2 cloves garlic (peeled and chopped)
  • One 16-ounce container cherry tomatoes (halved)
  • 1/2 cup dry white wine (such as pinot grigio)
  • 1 1/2 cups mixed pitted olive 
  • 2 tsp oregano leaves 
  • 3/4 cup Italian parsley leaves (chopped)
  • 1 cup freshly grated Parmigiano-Reggiano

Instructions


Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain well, reserving 1/2 cup of pasta water.


Prepare the Sauce Base: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the salmon with 1/4 teaspoon of salt and cook for 2-3 minutes on one side, undisturbed, until golden brown. Add the onion and garlic, stirring often for about 1 minute. Add the cherry tomatoes, season with the remaining 1/4 teaspoon of salt, and cook for 3 minutes, stirring frequently. Reduce the heat to medium, deglaze the pan with white wine, and simmer for 2 minutes to reduce slightly. Stir in the olives, oregano, and parsley.


Add Garlic and Seasonings: Stir in the garlic, thyme, oregano, salt, and pepper. Cook for 60-90 seconds, stirring frequently.


Combine and Serve: Add the cooked pasta to the sauce and sprinkle with Parmigiano-Reggiano. Toss well to coat, adding 1/4 cup of reserved pasta water and the remaining olive oil. Adjust with more pasta water if needed to ensure the sauce coats the noodles. Serve immediately and enjoy!
