Ingredients

  • 12 oz. whole wheat penne
  • 1 Tbsp. extra-virgin olive oil
  • 1 lb. boneless skinless chicken breast
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 tsp. oregano
  • 1/3 c. white wine
  • 2 garlic cloves, minced
  • 1 1/2 c. chopped tomato
  • 1 c. heavy cream
  • 1 c. shredded low fat mozzarella
  • 1/2 c. finely grated Parmesan
  • 1 1/2 c. baby spinach
  • 2 Tbsp. chopped fresh parsley

Instructions


Cook the Pasta: Boil the penne in salted water according to the package instructions until al dente. Drain and set aside.


Cook the Chicken: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and oregano, then cook for about 8 minutes per side until golden. Let the chicken rest for 5 minutes before slicing into strips.


Make the Sauce Base: Deglaze the pan with white wine, scraping up any golden bits with a wooden spoon as the wine simmers.


Add tomatoes and cream: Stir in tomatoes and garlic, cooking until softened, about 2 minutes. Add the cream, bringing it to a simmer, then stir in mozzarella and Parmesan until melted. Season the sauce with salt and pepper.


Combine and serve: Turn off the heat, toss in the cooked penne, spinach, and parsley, and mix until the pasta is coated and the spinach has wilted slightly. Serve immediately.
