  • 1/2 tablespoon  olive oil
  • 16 ounce carton egg whites
  • 5.3 ounce container 2% cottage cheese, ~ 1/2 cup
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon seasoning salt, like adobo
  • 1/4 cup chopped shallots or red onion
  • 1/4 cup chopped scallions
  •  1 medium orange or red bell pepper, chopped
  • 1/2 cup chopped steamed broccoli or frozen
  • 6 slices uncured turkey bacon, cut in half
  • 1/4 cup sharp shredded cheddar cheese
  • Olive oil or non-stick spray

Instructions

Prepare the Oven and Muffin Tin:
Preheat your oven to 350°F. Generously spray a 12-cup nonstick muffin tin with olive oil to ensure the muffins don’t stick.


Saute the Vegetables:

Heat olive oil in a pan over medium-low heat. Cook the shallots, scallions, and bell pepper for 5-6 minutes until tender.


Add the Broccoli:
Stir in the broccoli and cook for an additional minute.


Mix the Egg Base:

In a large bowl, combine the egg whites, cottage cheese, garlic powder, and seasoning salt. Whisk until well-blended.


Combine the Veggies with the Egg Mixture:

Add the sautéed vegetables to the egg mixture and mix thoroughly.


Assemble the Muffins:

Line each muffin cup with half a slice of turkey bacon around the edges. Pour in the egg mixture, filling each cup about 1/3 full.


Top and Bake:
