Ingredients
- 3 slices bacon, cut into ½-inch thick pieces (optional turkey bacon)
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 large sweet potato, peeled and diced into ½-inch cubes (approx 4 cups cubes)
- 2 cups kale leaves, roughly chopped
- ¼ teaspoon cumin
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- Salt and freshly ground black pepper, to taste
- 4 eggs
- 1 green onion, sliced
Instructions
Cook the Bacon: Heat a large sauté pan over medium heat. Add the bacon and cook until it’s golden and crispy. Remove the bacon with a slotted spoon and place it on a paper towel to drain.
Sauté the Veggies: Add the diced onion and red bell pepper to the pan. Sauté for about 1 minute, just until softened.
Cook the Sweet Potatoes: Stir the diced sweet potato and spices into the pan. Cook for 10-12 minutes, stirring frequently. Cover the pan with a lid during the last 5 minutes to soften the sweet potatoes until fork-tender.
Add Kale and Bacon: Return the bacon to the pan, add the kale, and stir for 1-2 minutes until the kale wilts.
Cook the Eggs: Create 4 small wells in the hash using a spatula. Crack an egg into each well and cook until the eggs reach your desired doneness. Cover the pan with a lid to speed up the cooking process if needed.
