Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 1/2 small red onion, thinly sliced
  • 2 cups packed baby spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 clove garlic, sliced
  • 10 large eggs, beaten
  • Salt and ground black pepper

Instructions

Preheat the Oven:

Preheat the oven to 375F.


Saute the Vegetables:
Heat the olive oil in a medium oven-safe nonstick skillet over medium-high heat. Add the diced bell peppers and sliced onion, cooking for 6-7 minutes, stirring occasionally, until softened. Add the spinach, sun-dried tomatoes, and garlic, and cook for about 1 minute, stirring frequently, until the spinach is wilted but still vibrant green.


Add the Eggs and Bake:
Lower the heat to low and pour in the beaten eggs. Season with 1 teaspoon of salt and a few grinds of black pepper. Gently stir to evenly distribute the vegetables. Transfer the skillet to the oven and bake for 13-15 minutes, or until the eggs are fully set.


Cool and Store:

Let the dish cool for 5 minutes before slicing it into 6 pieces. Store leftovers in an airtight container in the refrigerator for up to 1 week. Enjoy!
