Ingredients
- 6 8-inch wheat tortillas
- 3 medium sweet potatoes
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- 6 large eggs
- 1 avocado, diced
- 1/2 cup shredded low fat mozzarella cheese
- 1/3 cup red enchilada sauce
Instructions
Cook the Sweet Potatoes
Pierce the sweet potatoes several times with a fork. Microwave them on high for 4-6 minutes, or up to 10 minutes depending on their thickness, until fully cooked through.
Prepare the Black Beans:
In a separate bowl, combine the black beans with cumin and chili powder. Stir well to evenly coat the beans, then set aside.
Cook the Eggs:
In another bowl, beat the eggs until well mixed. Spray a skillet with nonstick spray and heat it over medium-low heat. Pour in the eggs and cook, folding gently every few minutes to create fluffy scrambled eggs. Once fully cooked, remove from heat.
Assemble the Burritos:
