Waffle Iron

Mixing Bowl

Ingredients

  • 1 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup pumpkin puree
  • ¾ cup unsweetened almond milk (or any milk)
  • 1 egg
  • 1 teaspoon vanilla
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil

Instructions

Prepare the Waffle Iron
Begin by preheating your waffle iron. In a large bowl, combine the dry ingredients—whole wheat pastry flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt—and whisk them together until evenly mixed.

Prepare the Wet Ingredients:

In a separate large bowl, mix the wet ingredients—pumpkin puree, almond milk, egg, vanilla, maple syrup, and coconut oil—until smooth. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the batter light and fluffy.

Cook the Waffles:
Spray the waffle iron with nonstick cooking spray. Pour the batter into the preheated waffle iron and cook according to the manufacturer’s instructions, about 3-4 minutes, or until the waffles are golden and set. This recipe makes 2 large Belgian waffles.

Serve and Enjoy:

Top the waffles with fresh fruit and a drizzle of maple syrup if desired. Serve warm and enjoy your delicious and healthy pumpkin waffles!
