Ingredients

  • 6 8-inch wheat tortillas 
  • 3 medium sweet potatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder 
  • 6 large eggs 
  • 1 avocado, diced
  • 1/2 cup shredded low fat mozzarella cheese 
  • 1/3 cup red enchilada sauce

Instructions

Cook the Sweet Potatoes
Pierce the sweet potatoes several times with a fork. Microwave them on high for 4-6 minutes, or up to 10 minutes depending on their thickness, until fully cooked through.


Prepare the Black Beans:

In a separate bowl, combine the black beans with cumin and chili powder. Stir well to evenly coat the beans, then set aside.


Cook the Eggs:
In another bowl, beat the eggs until well mixed. Spray a skillet with nonstick spray and heat it over medium-low heat. Pour in the eggs and cook, folding gently every few minutes to create fluffy scrambled eggs. Once fully cooked, remove from heat.


Assemble the Burritos:

Warm the tortillas in the microwave for 10-20 seconds to make them pliable. Lay each tortilla flat and spread a layer of mashed sweet potato on top. Evenly divide and add the eggs, diced avocado, seasoned black beans, and shredded cheese. Drizzle 1 tablespoon of enchilada sauce over each tortilla. Fold in the ends, then roll up the burritos tightly.


Reheat and Serve

To warm the burritos, place them on a baking sheet and heat in the oven at 300°F for 5-10 minutes or microwave for 1-2 minutes. Serve with sour cream, Greek yogurt, salsa, or hot sauce. Enjoy! Makes 6 burritos.
