Ingredients

Oatmeal:

  • 2 teaspoons unsalted butter
  • 1 1/4 cups old-fashioned rolled oats
  • 3 tbsp light brown sugar
  • Salt
  • 1 2/3 cups plain unsweetened almond milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon pure almond extract


Topping

  • 1/3 cup skin-on sliced almonds
  • 1/3 cup old-fashioned rolled oats
  • 1/3 cup light brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon whole-wheat flour
  • 1/8 teaspoon cinnamon
  • Salt
  • 12 ounces frozen mixed berries, thawed (2 1/2 cups frozen; 1 1/2 cups thawed)
  • Two-percent Greek yogurt for serving, optional

Instructions

Preheat the Oven:
Preheat the oven to 350°F. Grease a 2-quart baking dish or an 8-inch square baking pan with butter to prevent sticking.


Prepare the Oatmeal Mixture:

In a large bowl, mix together the oats, brown sugar, and 1/8 teaspoon salt. In a separate medium bowl, whisk together the almond milk, egg, vanilla extract, and almond extract. Pour the milk mixture into the oat mixture and stir until well combined.


Make the Topping:
In a medium bowl, combine the almonds, oats, brown sugar, melted butter, whole-wheat flour, cinnamon, and 1/8 teaspoon salt. Mix until evenly combined.


Assemble and Bake:

Pour the oatmeal mixture into the prepared baking dish. Evenly arrange the thawed berries (with any juices) over the top, then sprinkle with the prepared topping. Bake for about 50 minutes, or until the topping is lightly browned and the oatmeal is just set.


Cool and Serve

Let the oatmeal bake cool on a rack for 10-15 minutes. Serve warm with a dollop of Greek yogurt, if desired. Enjoy!
