Ingredients

For the Nougat Layer:

  • 1 cup almond flour (or finely ground almonds)
  • ¼ cup peanut butter (or almond butter)
  • 2 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • 1-2 tbsp milk

For the Caramel Layer:

  • 8 soft dates, pitted
  • 2 tbsp peanut butter (or almond butter)
  • 2 tbsp milk
  • ¼ tsp salt
  • ¼ tsp vanilla extract
  • ¼ cup chopped roasted peanuts

For the Chocolate Coating:

  • ½ cup dark chocolate chips (70% or higher)
  • 1 tsp coconut oil

Instructions

  1. Make the Nougat Layer:
  • In a bowl, mix almond flour, peanut butter, honey (or maple syrup), and vanilla.
  • Stir until a dough forms. If it’s too dry, add milk little by little.
  • Press the mixture into a parchment-lined pan or roll it into small bite-sized pieces.
  • Place in the freezer for 10-15 minutes.

  2. Prepare the Caramel Layer:

  • Blend the dates, peanut butter, milk, salt, and vanilla until smooth and creamy.
  • Stir in the chopped peanuts for crunch.
  • Spread the caramel over the nougat layer or top each bite if making individual pieces.
  • Freeze again for 20 minutes until firm.

    3. Coat with Chocolate:

  • Melt dark chocolate and coconut oil in a microwave or over a double boiler.
  • Dip each bite into the melted chocolate, ensuring an even coating.
  • Place on a lined baking sheet and refrigerate for 10-15 minutes until set.
